BUTTERY Apple Pie Bread Pudding

What do you do when you have 7 hot dog buns, 6 burger buns, and 4 Hawaiian rolls that are not going to be used? MAKE BREAD PUDDING!!!! Recipe below!

Ingredients:

Into a mixing bowl throw in:

  • 4 eggs

  • 1 cup of milk

  • 1/3 cup of brown or white sugar

  • 1 cup of maple, honey or vanilla yogurt

  • 2 tsp of cinnamon or pumpkin pie spice

  • 1 tsp of vanilla extract

  • 1/2 can apple pie filling (cut chunks of apple into smaller pieces)

  • 1 stick of melted salted butter

  • 6-8 cups of big bread chunks

  • Optional: 1/2 cup butterscotch chips or white chocolate chips.


Directions

Preheat oven to 350. Butter a 9x13 Pyrex. Set aside.

Mix well and set aside. Microwave your butter for 30 seconds. Pour half into the wet mixture.

Break up your breads into chunks if you haven’t already. Pour the other half of butter onto these bread chunks. Pour the wet mixture over the bread and lightly toss the bread in the wet mixture. This is where you need to add caramel/butterscotch or white chocolate chips if you’re going to use them. Lightly fold them in.

Pour wet bread mix into buttered Pyrex dish. Smoosh down with a spatula to get it stuck together. Bake for 30-40 minutes.
Top with cinnamon sugar, honey butter or caramel ice cream glaze and DEFINITELY a scoop of good ol’ vanilla ice cream.
