As a working mom of 2 boys, I need to keep things simple, tasty, and well, FAST. I make things from scratch when I can, but I also take advantage of shortcuts. It’s all about being practical…right? When you’re a mom, you don’t have time for anything else.

So where did my passion and love for food come from?

Food works in mysterious ways...it holds traditions, it brings people together, and it makes us feel good. You know you're having something good to eat when you find yourself dancing around. I firmly believe that food makes you feel good and thus can spiritually invigorate the soul. I was raised to always TRY, TRY, TRY, because in the end, how do you really know if you like or don't like something if you haven't tried it?? Through my "TRY" journey, I discovered all sorts of cuisines! Not only was I fortunate to live in our diverse Nation's capital and test my taste buds with so many flavors from all over the world, but I have also been fortunate to travel to Europe and my parent's homeland, Nicaragua, where I also fell in love with Central American food.

Of course, I also have to give props to the genes I inherited because apparently I have the passion for food in my blood. I call it the "culinary bloodline". My great, great Grandmother wrote a cookbook, available only in Spanish called "50 Anos en la Cocina".

I am trying to use the foodie, and cook in me to create healthy meals that are NOT boring or BLAND. We are bringing in the heat, bold flavors, fusions of all sorts, and EZ-PZ prep strategies. I am also a big fan of trying to keep the mess in the kitchen to a minimum so I also try to avoid using too much kitchenware. You will also find that after eating my food on a consistent basis, that you will FEEL good and most importantly feeding your soul through all that confidence, healthy energy and positivity that believe it or not, can all stem from what's on your plate.
