Left-Over Baguette mini French Toast

What a better way to use a leftover baguette than by making mini French toast? I got this idea from the mom of a friend (Joan) and I’ve been using my leftover baguettes the same way ever since. Great for making for guests during the holidays for brunch. I have a great French toast casserole recipe that I’ll share over the holidays that you can make the night before and pop into oven in the am for guests if you don’t want to be making batches over the stove all morning! Enjoy the recipe! And make sure to do yourself a favor and grab this amazing Trader Joe’s cinnamon bun spread...maybe grab 2 jars because it’s seasonal only!

Ingredients:

  • 1 French baguette sliced 1/4 in thick

  • Trader Joe’s Cinnamon Bun Spread (optional)
    Mix:

  • 1 cup of vanilla almond milk or your milk of choice

  • 1/4 cup of heavy cream

  • 1 tsp of cinnamon powder

  • 1 tsp of vanilla extract

  • 1 egg

Directions

Whisk the mix until all combined and soak the slices of baguette in the mix until soft. Transfer 6-7 slices to a buttered skillet and make sure not to overcrowd the pan. The ends of the baguette need to soak the longest so I put them in the mix in the beginning and sautée them at the end. Sprinkle some cinnamon sugar mix (optional) on top of the baguette slices. On medium #5 on electric stoves, flip and sautée your slices until golden brown on both sides. Instead of maple syrup, add a touch of the cinnamon bun spread. Enjoy!
