Egg White B-Fast Burrito

After Halloween and all the sweet treats we had, I am all about bringing my gut back to normal and bringing the healthy balance back to my diet. Does anyone else ever feel like they fell off the wagon so badly they need to get back on PRONTO? That’s me right now! So breakfast is looking like this!

This is an Egg White, Cheese, Sausage and Spinach Burrito

Ingredients

  • 1/3 cup egg whites

  • 1 tblsp of milk

  • 1 tblsp of shredded cheese of your choice

  • 1 pinch of Pepper

  • No salt needed because turkey sausage is salty.

  • 1 handful of spinach

  • 2 applegate turkey sausage links (frozen section)

  • 1 tblsp of olive oil

  • 1 Siete brand Almond Flour tortilla

Instructions
In a wet paper towel, wrap turkey sausage and place on a microwave safe plate. Microwave for 30 seconds. Then slice the sausage.

In a small bowl mix egg whites, cheese and pepper and milk together. In a skillet add the tblsp of olive oil, sliced warm sausage and spinach. Sauté until spinach has wilted and pour in egg whites/cheese mix. Put on low and let the egg whites get puffy and warm. With a spatula lightly combine the cooked parts of the egg with the uncooked portions LIGHTLY tossing it around. Warm up tortilla wrapped in a damp paper towel in the microwave for 30 seconds. Once the egg looks firm and cooked, place into your warm tortilla and enjoy with avocado and hot sauce or however you enjoy your breakfast burrito best!
