Cast-Iron Baked Mexican Chicken Chilaquiles

Mexican Chicken Chilaquiles

You will need:

  • 20 corn tortillas ripped up.

  • 1 rotisserie chicken cooked

  • 1 can of rotel diced tomatoes, chiles and cilantro

  • 1 can of black bean soup

  • 1 bag of frontera key lime taco skillet sauce with roasted tomatillo and green chile 8oz

  • 1 can of Hatch (or any brand you like) red enchilada sauce

  • 1/4 cup of sour cream

  • 1/2 cup of Mexican cheese mix

Garnish:

  • Avocado

  • Cilantro

  • Thinly sliced red onion

  • 1/4 cup of feta cheese or cotija cheese

  • Fried egg šŸ³

Directions:

First on your cookie sheet, place la Banderita corn tortillas ripped into pieces and bake in oven with some brushed canola oil (try to cover as much of all the prices of tortilla as possible) 375 degrees for 10-15 minutes.

While the tortillas are crisping up in the oven, shred the rotisserie chicken and place the shredded chicken in a large mixing bowl.

Open and drain the Rotel can of excess liquid and mix with the shredded rotisserie chicken. Open and drain the Goya black bean soup can and mix with the shredded chicken. Add the sour cream and mix.

In a large rectangular pyrex, you will need to use half of the taco skillet sauce as your first layer of the chilaquiles. Once you've poured an even layer on the bottom of the pyrex add some baked corn tortillas trying to cover as much as the green chile sauce as you can. You're going to build the chilaquiles up kind of like a lasagna.

Now add generous spoonfuls of the shredded chicken mixture on top of the z baked tortillas until you have an even layer. By the way, You're only going to have two layers of the chicken and the tortillas. Okay now add some of the RED enchilada sauce on top of the Chicken just drizzle it over half the can. Now add another layer of the baked tortillas, add the rest of the RED enchilada sauce. Now add the chicken on top of that and the rest of the GREEN taco skillet sauce. Sprinkle the Mexican cheese on top.

Bake in the oven you already had on from the tortillas for 20 minutes.

While that is baking get your garnish ready, some chopped cilantro, thin red onions, lime wedges for sprinkling fresh lime on top and the feta cheese!

Enjoy with a fried egg on top! You can either serve with all the garnishes on top already or serve the garnishes separately and let everyone choose what they want :)
