Twice Baked Potatoes

Twice baked potatoes 🥔 omg! These are worth baking TWICE! I recommend this as a side for Easter dinner or brunch! You guys...so much goodness.

Ingredients

  • 10-12 golden potatoes 🥔 diced halved twice

  • 1/2 tblsp of paprika

  • 1/2 tblsp of garlic salt

  • 2 tblsp of olive oil

  • 1 tablespoon of mayo

  • 1/2 cup of mixed shredded cheese

  • 1/3 cup of grated Parmesan cheese

  • 1/2 tblsp of garlic powder


Angry Potatoes Patatas Sauce:

  • 1 green bell pepper, rough chopped

  • 1 white onion, rough chopped

  • 5 tomatoes on vine, rough chopped

  • 2 tablespoons of olive oil

Directions
Preheat oven to 400 degrees. Toss the diced potatoes in a bowl with the paprika, garlic salt, mayo and olive oil. Line a baking sheet with parchment paper or place the potatoes in a glass Pyrex. Roast for 30 minutes. Add 1/2 cup of mixed shredded cheese (we did a 3 cheese blend that had Monterey Jack cheese). Allow to melt another 5 minutes. Take potatoes out and set aside and let them cook for 10-15 minutes.
Now here come the 2x baked part. Toss them into the same bowl you mixed them in earlier. Add the Parmesan cheese and garlic POWDER. Toss the potatoes in the mix. Now place them back on the parchment paper baking sheet. Place back into the oven for 20 minutes.

For the sauce:

While the potatoes bake, in a sauce pan, drizzle the 2 tblsp of oil. Toss in the tomato, green bell peppers and onions. Cover and Let them simmer on low for 15 minutes. Let mixture cool and either immersion blend it until smooth or transfer to blender and liquefy. Toss back into the sauce pot and bring up to boil and then simmer on low for another 5 minutes. Set aside and add some of your favorite hot sauce in if you want some heat. Pour over your cheesy potatoes and enjoy!

***If you want Ali Oli - mix mayo and some minced garlic that’s been sautéed in a tablespoon of olive oil together and serve on the side.
