Freshly Made Gazpacho

July 4th is coming up and if you’re like me and you need a fail-proof way of keeping something healthy at your social distance celebration, then this classic Gazpacho is going to help! Also you literally just chop a few things up rough chop and throw them into a blender so EASY! Servings: 8-10 scale down accordingly- I did social distance friendly servings - no more than 10 😉

Ingredients

  • 12 ripe red tomatoes on the vine (cored- don’t want the seeds) rough chopped

  • 1/4 cup - 1/2 cup of rough chopped cilantro

  • 1 slice of bread

  • 1 glove of garlic

  • 2-3 shallots (other options: 1/2 red onion or sweet onion)

  • 2-3 mini cucumbers or 3/4 of an English cucumber. I chop one of the mini cucumbers or 1/4 of the English cucumber for garnish.

  • 1 1/2 red bell pepper

  • 4 tablespoons of olive oil

  • 1/4 cup of sherry or red wine vinegar

  • Salt and pepper to taste


Directions

You will need a blender for this. Core tomatoes and roughly chop. Soak bread in a little water. Cut up 2 of the mini cucumbers tough chop. Sometimes I peel them sometimes I don’t. Just remember to wash your produce with some veggie wash or mild soap and hot water. Now just put it all into your blender and purée. If you make it a few hours or a night before serving, flavors will be even bolder. Add water is soup is too thick. Garnish with Parmesan crisps or whisps, some chunks of cucumber and a fresh drizzle of your finest olive oil. Enjoy!
