Olive Oil Poached Cod with Garlic Chips

I make this at least once every 2 weeks in my house. It’s sooooo easy and soooo good with ANY white fish. My kids fell in love with fish because of this dish! Also you can add some pasta or bred to this because the sauce is break-soaking good.

Ingredients

  • 2 lbs of cod or white fish (4-5 fillets)

  • 6 cloves of garlic, sliced

  • 1 tablespoon of garlic paste

  • 1 tablespoon of dill paste

  • 1/2 small white onion, thinly sliced (you want the rings)

  • 1/4 cup of apple cider vinegar

  • 1 tsp of chili pepper flakes (optional for heat)

  • Lots of olive oil


Directions
Preheat your oven to 400 degrees.
Pat fish dry and then in a tupper ware, cutting board or on a baking sheet you can salt and pepper the fish. 1/4 tsp of salt 🧂 + 1/4 tsp of pepper on each side of each fillet. Add a little squeeze 1/4 tsp of garlic paste and dill paste on each fillet as well. Squeeze the Juice of 1 lime across all fillets and then rub the contents on both sides of the fillet.


Now, I bake my fish in a glass or ceramic Pyrex because the olive oil sauce for this thrives in glass & ceramic. It doesn’t burn or stick like it would to a metal pan & I just feel like it even presents better so if you’re hosting a dinner, this is a dish you can bring from your oven to the table to serve.
Coat the bottom of your Pyrex dish with 1/2 cup of olive oil. Lay the dill and garlic rubbed fillets carefully into the Pyrex. Skin side down. Sprinkle the thin sliced onion rings across the top of the fillets. Now 1/4 cup -1/2 cup more of olive oil gets drizzled on top. Place Pyrex into oven for 20 minutes.


While fish cooks, let’s prep the garlic chips. Thinly slice (shavings) 5-6 cloves of garlic. In a small skillet pour 1/4 cup olive oil. 3-5 minutes BEFORE your fish is done cooking, add your garlic shavings (and chili pepper flakes if you’re doing spicy) into it and allow them to toast. Lightly browned. You have to keep an eye on these & the heat can’t be too high or they will quickly go from toasty to burnt! Start on hi temp and work your way down to a 5-6 on your stove.


Almost as soon as you take the fish out of oven, you will pour hot oil with the garlic chips over the fish. Then you will add 1/4 cup of apple cider vinegar in splashes over each fillets. that’s it! Enjoy with bread to soak up that sauce or use that same sauce to dress side of pasta.
