Easy Slaw (NO mayo!)

Okay if you’re looking for the perfect side salad to have in the peak heat of summer m, this is it! @realhomechef nailed it with this recipe!

Ingredients

  • 2 poblano peppers, halved and seeded

  • 1 lime, juiced

  • 1 tblsp of olive oil

  • 1.5 tblsp of brown sugar

  • 16 oz of cabbage slaw in a bag from produce section

  • 4 sprigs of green onion

  • 1.5 tablespoons of minced cilantro

  • 1/4 tsp of salt

  • 1/4 tsp of pepper

Directions
In a bowl, combine sugar, salt, pepper, lime juice, olive oil and toss in the shredded cabbage. On a hot grill pan with 1 tblsp of olive oil or in the oven at 425 degrees roast your poblano peppers 3-5 min each side or 12 minutes in oven until skin looks charred. Also cut the white ends off the green onion sprigs toss in the green onions whole for roasting or in the hot pan as well.

Once peppers are cooked, julienne the peppers thinly and toss in with the cabbage. Rough chop the charred green onion and toss in. Lastly throw in the cilantro and mix up! Serve and enjoy!
