Air Fried (AF) RED Tomatoes

Did you buy too many tomatoes and already made 3 different kinds of gazpacho but still have some leftover that you don’t see yourself using before they over ripen?! I sure did! So here it is! Another great excuse to use that air fryer and make those delicious tomatoes you crave at a good southern restaurant!

Ingredients

  • 3-4 large tomatoes

  • 1.5 cups of panko crumbs

  • 1/2 cup of grated Parmesan cheese

  • 1 tsp of salt

  • 1 tsp of paprika

  • 1 pinch of cayenne pepper

  • 3/4 cup of flour

  • 1 tblsp of garlic powder

  • Primal Kitchen BBQ ranch dressing (Whole Foods has in the produce area)

  • 3 eggs

  • 2 tblsp of milk


Directions
First: Slice off the stem/top part of the tomatoes 🍅 then slice into 1/4 inch pieces. Salt and pepper each side. Set aside.
Second: get your assembly line ready. 1 deep plate or bowl with the flour and garlic powder mixed.
Another plate with the eggs mixed with the milk.
Another plate with the panko, paprika, salt, cayenne and Parmesan cheese.
Prep your air fryer by spraying the bottom with olive oil. Now take each tomato slice and dredge in flour mixture (both sides), then the egg mixture, and finally the panko mix. Place carefully into the air fryer and repeat process until the tomatoes are not crowded but equally spaced out with a little room. I had to do 2 batches for 3 large tomatoes. Spray the tomatoes with olive oil.


Set air fryer to 400 degrees for 10 minutes, flipping the tomatoes half way through with tongs careful not to disturb the panko coating too much.


Once fried and you’ve finished your tomatoes. Drizzle the bbq ranch on top. ENJOY!

Chipotle Aioli:
In a food processor or blender:
- 1/2 cup Mayo
- 1/2 tblsp of red wine vinegar
- 1 chipotle peppers in adobo
- 2 cloves of garlic
