Chicken Tortilla Soup

Chicken Tortilla Soup warms the soul but also has some great ingredients in it that can spice up your life and make it an easy 1 pot meal for you and your family! Here’s the recipe:

Ingredients

  • 1 rotisserie chicken, shredded

  • 1 cup of salsa or can of Rotel (spicy level is your choice)

  • 1 tablespoon of olive oil

  • 2 cloves of garlic minced

  • 1/4 onion minced or diced

  • 2 large tablespoons of whole fat or 2% Greek yogurt

  • 1 can of Goya black beans

  • 2 tblsp of flour

  • 10 oz bag of frozen corn

  • 2 small zucchini, quartered in chunks

  • 32 oz chicken broth

  • 2 teaspoons of ground Cumin

  • 1/2 Taco Seasoning packet or 1-2 tablespoons taco seasoning (to taste)

    Garnish:

  • Chopped Fresh Cilantro

  • Avocado chunks

  • Red onion slices

  • Cotija or feta cheese

  • Crushed up tortilla chips

Directions
In a soup pot, sauté the garlic and minced onion with 1 tablespoon of olive oil until soft and transparent. Add the chopped zucchini and stir on medium high until zucchini starts to get a little tender. Add the flour and incorporate. We want to flour to heat up for 1 minute to cook through. Now comes the easy part. Add the chicken, drained beans, salsa or Rotel and frozen corn. Bring up to high and incorporate all the ingredients together. Now add in your broth and your Greek yogurt. Finally add your taco seasoning and cumin. Simmer on low for 10-15 minutes covered. While the soup simmers, prepare your garnishes. Enjoy the soup!
