QUICK Baked Dill & Garlic Salmon w/ Butternut Squash

 

Fish once a week is something I try to do to not only eat healthier during the week but also to introduce my kids to eating well rounded meals that include seafood. So here is an easy one for you all! Happy cooking! Easy and QUICK Baked Dill & Garlic Salmon with Butternut Squash

Ingredients

  • 4 fillet of Atlantic salmon

  • 1/2 tsp of dill paste

  • 1/2 tsp of garlic paste

  • 1 lemon πŸ‹

  • 2 tablespoons of butter (a little piece for each fillet)

  • 1 butternut squash cubed

  • 1/4 tsp of cinnamon

  • 1/4 tsp of garlic powder

  • 1/4 tsp of taco seasoning

  • 1/4 ancho chili pepper powder

  • 1/2 tsp of salt

  • 1/2 tsp of brown sugar

  • 1/2 tsp of pepper

Directions
PREHEAT oven to 400 degrees. Line a baking sheet with foil. Cube your butternut squash and in a bowl big enough mix the squash with 3 tablespoons of olive oil, the brown sugar, 1/2 tsp pepper, 1/2 tsp salt, chili powder, taco seasoning, garlic powder, and cinnamon. Then dump it onto baking sheet and spread around until layer is even. Place in oven for 25-30 minutes.


For the salmon, grab a glass Pyrex baking dish that can fit your fillets in comfortably skin side down. Coat the bottom of the Pyrex with two tablespoons of olive oil. Pour the juice of half a lemon into the fish. Add salt and pepper on the salmon along with the dill and garlic paste. You CAN think slice the lemon and place a piece on top and bake this way (looks nice for presentation purposes if entertaining) but you don’t have to. Then place the salmon fillets in the PYREX with the bits of butter on top of each piece. Place in the oven. Cook for 20 minutes until salmon is a whitish light pink color. Once baked, squeeze the other side of the lemon on top of the fillets before serving.
