Arepas de Queso (Cheese Arepas)

Inspired by the Disney film Encanto to make these! I couldn’t resist making these at home while we sat and watched the movie again for the 2,346th time. So if you all want to make these at home, here’s the recipe. Tip: to reheat them, I suggest sticking them in toaster oven, oven or air fryer for a few minutes.

Ingredients

  • 2 cups of pre-cooked cornmeal (PAN brand)

  • 2.5 cups of luke warm water

  • 1 tsp of salt

  • 1/2 cup of Queso fresco, grated

  • 1 whole 16oz mozarella cheese, grated

  • 3 tblsp of softened butter

Directions
Mix the 2 cups of PAN with the Luke warm water and salt until we’ll incorporated. Add 1 tsp salt and mix. Add the 1/2 cup of grated queso fresco. As well as Add 1/2 of the grated mozzarella cheese. Set aside for 5 minutes. Add softened butter and incorporate.

Create a flat pattie, add some of the shredded mozzarella cheese and add another flat pattie on top. Or make a ball, take two fingers and make a little well in middle, Place cheese inside and then close up dough around the well, and then flatten to 3/4 inch thick. Place cheesed filled arepa on skillet. Heat up 3-5 minutes and another 8-10 minutes on low or finish baking in oven at 300 degrees for 10 min. Sprinkle a bit of salt on top and enjoy!
