Easy and LIGHT Chicken Salad

Ingredients

  • 1 cooked rotisserie chicken from your local grocery store. Shred the chicken and pulse it in a good processor.

  • 1 tsp of real lemon juice

  • 1 celery stalk

  • 1/4 green or red bell pepper

  • 1/4 shallot/small red onion

  • 1/2 cup of Greek non fat plain yogurt

  • 1 handful of reduced sugar craisins

  • Salt and pepper to taste

Directions
After pulsing your rotisserie chicken, set aside in a bowl. In the same food processor add the celery, shallot/red onion, and green bell pepper. Pulse. Then mix into the pulsed chicken.


Add the Greek yogurt and lemon juice, mix. Taste. Then add salt and pepper to your liking. Lastly add your craisins. Mix and enjoy. Feel free to get creative. You can add herbs or spices like curry powder to the yogurt mixture and have a curry chicken salad. You can use mandarins instead of craisins and cilantro. Or you can keep it as simple as you want. Make a sandwich out of it or have it as a dip with tortilla chips! Lots of options! Enjoy and don’t forget to take a picture and tag me if you make it!
