Amazing French Onion Soup

 

French onion soup anyone?! I know I know no carbs right?! But I had the Flu so I’m using that as an excuse to use this soup to follow doctor’s orders to ensure I get “lots of liquids”....and bread...and cheese and well onions too! Here’s a way to bring comfort food right to your taste buds and help that pesky flu go away!
This makes 3-4 servings. Double up if you need more :)

Ingredients

  • 4 tblsp of butter

  • 4 large yellow onions, thinly sliced

  • 1 tblsp of all purpose flour

  • 1/4 tsp of thyme

  • 6 cups of beef broth (if you have veggie or chicken broth use that)

  • 1 shot of sherry

  • 1 shot of brandy

  • 2 shots of white wine

  • 1 French baguette bread, sliced

  • 2 cups of shredded gruyere cheese

  • Salt and pepper to taste


Directions
In a soup pot, melt 2 tblsp of butter and add sliced onions. Start sweating the onions at medium to high heat and then put on low (3-4) and keep them sweating for 30 minutes. They will start to lightly caramelize towards the end of the 30 min.
Add tablespoon of flour and thyme. Stir them some more until they get all stuck together. Add sherry, brandy and white wine. Stir.
Add the broth! Stir. Cover and let simmer on low (level 2) for 10-20 min. Preheat oven to HI BROIL. On a baking sheet, line parchment paper, place your French bread. Melt the 2 other tblsp of butter and pour over your sliced French bread. Top the bread with loads (one handful each) of gruyere. I had three pieces of bread scooted together and that was my 1 piece per soup dish. Pop in broiler for 1 minute. WATCH IT! You don’t want the paper to light on fire, just kidding, no but seriously watch it!
Back to the soup, turn off heat. Stir, taste and see if you need to add salt. ;) Add a pinch of pepper. Enjoy the comforting warmth and deliciousness that is French onion soup! Bon apetit!
